Texas Caviar Recipe.

This one is always a big hit!  With a few substitutions that really don't even matter, I was easily able to make it Myra/FPIES friendly for her second birthday party.  If you want other versions, plenty comes up if you do a Google/Pinterest search of Texas Caviar or Cowboy Caviar.

The biggie for this one is the sauce or marinade or whatever you want to call it.  Chop the ingredients (those that need it) and let sit 6+ hours, ideally overnight, in this sauce.  Drain before serving.

1 cup salad oil (olive, canola, lots of options...we used corn oil this time)
1/2 cup apple cider vinegar
1/2 cup sugar
Heat to boiling, remove from heat, allow to cool, pour over veggies and mix it all together.  Cover, refrigerate, let sit 6+ hours or overnight.  Drain before serving.  Serve with chips, we like Fritos scoops.

For Myra's, we used:
Chopped bell peppers (green, red, orange, and yellow)
1 small can sliced black olives
1 can corn, drained
2 cups white beans (cooked first if using dry, otherwise out of the can and drained is fine)

Other ingredient ideas one could use: pimentos, celery, onion, other beans (we usually use pinto beans), or probably a million other things!  You could also add things like cilantro or lime juice.

Blueberry Cha Cha Recipe.

This is a recipe Trevor's mom has made and we adapted it to be Myra-friendly.  It can be made with any fruit pie filling, really.  We usually have it with cherries, but used blueberries for Myra's party.  I imagine there are plenty of variations one could use, especially for the crust, but to keep things clear and simple this is easily made to be, at a minimum, dairy- and soy-free.

The recipe calls for a graham cracker crust, so I started with this coconut flour substitute instead.  I pressed it into a 9x13 pan greased with coconut oil and baked for about 13 minutes.

Other ingredients needed: 
Whipped cream, 3-4 cans following this recipe and add powdered sugar
2.5 cups mini marshmallows
1 large can blueberry pie filling

Make the 1/2 of the whipped cream as directed then mix in marshmallows, spread over crust.  Drizzle pie filling on top and spread. Whip the rest of the cream with sugar and spread on top.  

The recipe says to refrigerate overnight, but we did not.  I put it in the freezer for about an hour and it was still good.  Refrigerating longer just allows the cream/marshmallows to set up a bit more.

A True Three Ingredient Chocolate Pudding Recipe.

I'm sure many of you have seen the "two ingredient" cake recipes floating around Pinterest and cyber space.  While it's true there are only two things to mix together, those of us who deal with food allergies know there are way more than two ingredients!  The box of cake mix in my cupboard has 12 ingredients, including two of the top eight allergens.  In the FPIES world, there are often requests for recipes that are truly simple to make and free of the really scary stuff.  I mean, anything can be scary for an FPIES kid, but some things are more commonly safe than others.

I got this recipe from a fellow FPIES mom who adapted it from other recipes found online, so I can't take credit for it and neither can my friend, she said.  Regardless, it's a simple recipe and could definitely be tweaked to suit your needs and taste.


 
Ready for the big reveal?
 
1 avocado (a ripe one, unlike what's seen in my photo)
Cocoa powder (as in pure cocoa, not a chocolate powder with other ingredients)
Pure maple syrup
 
For Myra's, I used 2 teaspoons cocoa powder and 1/2-3/4 teaspoon maple syrup.
 
Mix together and enjoy!  If you have a safe milk, you could add that.  Myra can have coconut, so I could have mixed that in, but she was growing impatient so I just went with it.  Of course, it does taste different than chocolate pudding from a box.  Myra gobbled it up and it's full of healthy fats, fiber, flavonoids, antioxidants, and more.
 
Note: I think it's universally known that chocolate is not safe for dogs.  We learned last year that cocoa is actually worse than chocolate.  So, be sure to keep your furry friends safe while your kid gets messy with the pudding.

FPIES: Potato Bites Recipe.

Although Myra's diet is very limited due to her FPIES, we are able to make her a variety of foods using substitutions with her safe foods.  These potato bites are great finger foods, very similar to tater tots.  As Myra gains more safe foods, we can add them to this recipe (herbs, spinach, etc.) to change the flavor.  This basic recipe is using only potato, coconut, and salt.

First, you'll need to make mashed potatoes.  I have a recipe (click here) using only potatoes, coconut, and salt.

Line a cookie sheet with parchment paper (my favorite FPIES cooking tip-non stick with no oils or sprays!).  Put the mashed potatoes in little balls, about the size of a gum drop, onto the lined cookie sheet.  Bake at 400 degrees Fahrenheit for about 25 minutes (I usually check at 20 minutes then in 5 minute increments) until they have browned and the outside is crispy.  Let cool and enjoy!  Myra loves these since she has recently given up being spoon fed and insists on feeding herself.  They're great with any other safes added into the mashed potatoes (spinach, meats, even fruits! FPIES kiddos, or any kiddos, don't seem to mind "weird" food combinations).

FPIES: Mashed Potatoes Recipe.

Although Myra's diet is very limited due to her FPIES, we are able to make her a variety of foods using substitutions with her safe foods.  I have literally slaved over a hot stove tweaking mashed potato recipes and this is the one that works best for us.  As Myra gains more safe foods, we can add them to this recipe (herbs, spinach, etc.) to change the flavor.  This basic recipe is using only potato, coconut, and salt.

6 medium potatoes (I use Yukon Gold because of the natural buttery flavor.  They are often a bit smaller than other potatoes, so I usually use 7 or 8)
2/3 cup light coconut milk (Trader Joe's canned, only ingredients are coconut and water)
1/4 cup coconut oil, melted (or  sometimes 1/3 cup coconut oil)
1/2 tsp salt

Cut potatoes into fourths or sixths, place into pot of water and boil for 20-25 minutes until soft.  Drain and place into a bowl with the other ingredients.  Beat with remaining ingredients until potatoes reach desired consistency.  I leave skins on the potatoes.  If using for potato bites (recipe to follow), smoother consistency may work better.  If using as mashed potatoes alone, a variety of smooth and lumpy potatoes can be good for texture variety.  Feel free to remove some when they are fairly lumpy then continue to beat what remains for a variety.  These freeze well.  I make this large batch and freeze into smaller containers.  I also use this to make Myra's Potato Bites.
